I made this cheesecake for a bake sale and it was gone in less than 2 hours! Light and fluffy, no cracks.
I've never made a cheescake before.
A water pan underneath would have been great as well.
I always leave the cheesecake in the closed over for 2 hours after baking — just to be sure.
